If you primarily ski in Australia, look for skis around 90mm. This will provide smooth edge-to-edge transitions and grip on firm snow, whilst being wide enough to avoid getting bogged down in the slush and crud. When picking a single ski for travel overseas, or prioritising soft snow performance, we would recommend going for a slightly wider footprint around 95-105mm. This will provide more float for deeper and softer conditions, but allows for reliable groomer performance when the conditions aren't as deep.
